Loss of a Legend

Paul Bocuse

February 11, 1926 - January 20, 2018

It was approaching the 25th anniversary of the pronouncement of the arrival of Nouvelle Cuisine by the French critics Henri Gault and Christian Millau. While working on a magazine piece on this, I had the extraordinary privilege to interview by telephone some of the prominent French chefs who were associated with Nouvelle. I never met the legendary Paul Bocuse, nor did I ever have the pleasure to dine at his gastronomic temple. But in 2000, I was thrilled to speak to him by phone.

The passing of this giant of gastronomy follows by barely seven months the death of another from those extraordinary chefs, Alain Senderens.

Nouvelle Cuisine?

It was more a history, than dishes - we were twelve or fourteen chefs from the generation after the War. Sure, the journalists talked about dishes, about lots of things, there were exaggerations…
